Apple Pie Cupcakes with Cinnamon Vanilla

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • 1 cup diced apples

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla.
  5. Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with flour.
  6. Fold in the diced apples.
  7. Fill the cupcake liners about 2/3 full and bake for 18-20 minutes.
  8. Let cool before adding toppings.

Notes

  • For extra flavor, add crushed walnuts or pecans to the batter.
  • Top with cream cheese frosting for a delicious finish.
