Bacon Cheddar Gnocchi Soup

Ingredients

  • 4 cups chicken broth
  • 1 pound gnocchi
  • 8 ounces bacon, chopped
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, cooking until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add gnocchi and cook until they float to the top.
  5. Stir in heavy cream, thyme, and cheddar cheese until cheese is melted.
  6. Season with salt and pepper. Serve hot, topped with bacon.

  • For a thicker soup, add more cheese.
