Bacon Cheddar Gnocchi Soup

A creamy and indulgent gnocchi soup loaded with bacon and cheddar cheese, perfect for comfort food lovers.

  • 4 cups chicken broth
  • 1 pound gnocchi
  • 6 ounces bacon, diced
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 cups spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic; sauté until soft.
  3. Add chicken broth and bring to a boil.
  4. Stir in gnocchi and cook until they float to the top.
  5. Reduce the heat, add cream and cheddar cheese, stir until melted.
  6. Add spinach, salt, and pepper, and cook until spinach has wilted.
  7. Top with cooked bacon before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • You can substitute turkey bacon for a lighter version.
