- 4 cups chicken broth
- 1 pound gnocchi
- 6 ounces bacon, diced
- 1 cup chopped onions
- 2 cloves garlic, minced
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 2 cups spinach
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add onions and garlic; sauté until soft.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until they float to the top.
- Reduce the heat, add cream and cheddar cheese, stir until melted.
- Add spinach, salt, and pepper, and cook until spinach has wilted.
- Top with cooked bacon before serving.
