  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the sugars and oil together until well combined.
  4. Add the eggs, pumpkin puree, and vanilla to the sugar mixture and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into a greased baking pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • For a cream cheese frosting, beat together cream cheese, butter, powdered sugar, and vanilla until smooth.
