Buffalo Chicken Stuffed Peppers

Buffalo Chicken Stuffed Peppers are a delicious and easy weeknight dinner option, combining spicy buffalo chicken with fresh bell peppers.

  • 4 large bell peppers
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, garlic powder, salt, and half of the cheddar cheese.
  4. Stuff the mixture into the bell peppers.
  5. Place the stuffed peppers in a baking dish and top with the remaining cheddar cheese.
  6. Bake for 25-30 minutes or until the peppers are tender.
  7. Garnish with chopped green onions before serving.

Notes

  • Feel free to use any color of bell peppers.
  • Adjust the amount of buffalo sauce according to your spice preference.
