- 1 medium butternut squash
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup grated Parmesan cheese
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half, scoop out the seeds, and brush the flesh with olive oil.
- Roast the squash in the oven for about 50 minutes until tender.
- In a skillet, heat the remaining olive oil and sauté the garlic until fragrant.
- Once the squash is done, scoop the flesh into a blender, add sautéed garlic, vegetable broth, and cream, then blend until smooth.
- Return the sauce to the skillet, add salt, pepper, nutmeg, and Parmesan cheese, stirring until well combined and heated through.
