Butternut Squash Pasta Sauce

  • 1 medium butternut squash
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and brush the flesh with olive oil.
  3. Roast the squash in the oven for about 50 minutes until tender.
  4. In a skillet, heat the remaining olive oil and sauté the garlic until fragrant.
  5. Once the squash is done, scoop the flesh into a blender, add sautéed garlic, vegetable broth, and cream, then blend until smooth.
  6. Return the sauce to the skillet, add salt, pepper, nutmeg, and Parmesan cheese, stirring until well combined and heated through.
  7. Serve over your favorite pasta and enjoy!

Notes

  • For a vegan version, substitute heavy cream with coconut milk and Parmesan with nutritional yeast.
  • This sauce can be made ahead and stored in the fridge for up to a week.
