Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the flour mixture to the wet ingredients and mix well.
  6. Fold in the ricotta cheese and mini chocolate chips.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes or until the edges are golden.
  9. Let cool on a wire rack and dust with powdered sugar before serving.
