Cheddar Garlic Herb Potato Soup

A creamy, comforting potato soup infused with garlic and herbs, complemented by crispy turkey bacon.

Ingredients

  • 4 medium potatoes
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 6 slices turkey bacon, cooked and crumbled
  • 1 tablespoon fresh herbs (thyme, rosemary, or parsley)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, and sauté until onions are translucent.
  3. Peel and dice the potatoes, then add them to the pot.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and let simmer until potatoes are soft.
  6. Use a potato masher to partially mash the potatoes for a creamy texture.
  7. Stir in the heavy cream and cheddar cheese until melted.
  8. Add crumbled turkey bacon and fresh herbs. Season with salt and pepper.
  9. Serve warm, garnished with additional cheese and herbs.

Notes

  • Feel free to substitute gluten-free broth to make it GF.
  • Can add vegetables like carrots or celery as desired.
