- 4 medium potatoes
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup cheddar cheese, shredded
- 1/2 cup heavy cream
- 6 slices turkey bacon, cooked and crumbled
- 1 tablespoon fresh herbs (thyme, rosemary, or parsley)
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add onions and garlic, and sauté until onions are translucent.
- Peel and dice the potatoes, then add them to the pot.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and let simmer until potatoes are soft.
- Use a potato masher to partially mash the potatoes for a creamy texture.
- Stir in the heavy cream and cheddar cheese until melted.
- Add crumbled turkey bacon and fresh herbs. Season with salt and pepper.
- Serve warm, garnished with additional cheese and herbs.
Notes
- Feel free to substitute gluten-free broth to make it GF.
- Can add vegetables like carrots or celery as desired.
