Cheesy Ranch Potatoes and Smoked Sausage

  • 2 pounds potatoes, cubed
  • 1 pound smoked sausage, sliced
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cubed potatoes with olive oil, ranch seasoning, salt, and black pepper. Toss to coat.
  3. Spread the seasoned potatoes onto a baking sheet and bake for 20 minutes.
  4. Add the sliced smoked sausage to the baking sheet and continue baking for an additional 20 minutes.
  5. Remove from the oven and stir in the sour cream and shredded cheese. Bake for another 5 minutes until the cheese is melted.
  6. Serve hot.
