- 1 cup pitted cherries, chopped
- 1/2 cup amaretto liqueur
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfingers
- 1/4 cup cocoa powder, for dusting
- In a bowl, combine the chopped cherries and amaretto liqueur. Let it sit for 30 minutes.
- In another bowl, whip the heavy cream until soft peaks form.
- In a separate bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth.
- Fold the whipped cream into the mascarpone mixture gently.
- Dip each ladyfinger into the cherry-amaretto mixture and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat the layers with the remaining ladyfingers and mascarpone mixture.
- Dust the top with cocoa powder.
- Refrigerate for at least 4 hours before serving.
Notes
- For a non-alcoholic version, replace amaretto with cherry juice.
- Feel free to add more cherry topping for extra flavor.
