Chicken Mushroom Spinach Crêpes with Mushroom Sauce

  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup milk
  • 1 cup flour
  • 2 eggs
  • 2 tablespoons butter
  • 1 teaspoon salt

Instructions

  1. In a bowl, mix flour, eggs, and milk to prepare the crêpe batter.
  2. In a pan, melt butter and sauté the mushrooms until golden.
  3. Add spinach and chicken, then season with salt.
  4. Cook crêpes on a skillet until golden brown on each side.
  5. Fill crêpes with the chicken and mushroom mixture, then fold and serve.

Notes

  • For extra richness, add cream to the mushroom sauce.
  • Serve with a side salad for a complete meal.
