Chimichurri Chicken Thighs

A delicious and easy recipe for chimichurri chicken thighs, perfect for a weeknight dinner.

Ingredients

  • 4 chicken thighs
  • 1 cup fresh parsley
  • 2 cloves garlic
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a food processor, combine parsley, garlic, red pepper flakes, olive oil, vinegar, salt, and pepper, then blend until smooth.
  3. Marinate the chicken thighs in half of the chimichurri for at least 30 minutes.
  4. Grill the chicken thighs for 6-7 minutes on each side or until fully cooked.
  5. Serve the chicken with the remaining chimichurri sauce on top.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Chimichurri sauce can be used as a dressing for other grilled meats and vegetables.
