Chocolate Coffee Toffee Crunch Muffins

  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brewed coffee, cooled
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup toffee bits
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, brown sugar, baking soda, and salt.
  3. In another bowl, combine the cooled coffee, vegetable oil, vanilla extract, and eggs, then mix well.
  4. Pour the wet ingredients into the dry ingredients, mixing until just combined.
  5. Fold in the toffee bits and chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra crunch, sprinkle additional toffee bits on top before baking.
  • These muffins can be served warm or at room temperature.
