- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brewed coffee, cooled
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup toffee bits
- 1/2 cup chocolate chips
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, sugar, brown sugar, baking soda, and salt.
- In another bowl, combine the cooled coffee, vegetable oil, vanilla extract, and eggs, then mix well.
- Pour the wet ingredients into the dry ingredients, mixing until just combined.
- Fold in the toffee bits and chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
