Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together milk, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix brown sugar and ground cinnamon to create the filling.
  6. Fill each cupcake liner halfway with batter, then sprinkle a tablespoon of the cinnamon filling, followed by more batter until the liners are about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. While the cupcakes are cooling, prepare the cream cheese frosting by beating together softened cream cheese, powdered sugar, and milk until smooth.
  9. Frost the cooled cupcakes and enjoy!
