  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix the cinnamon and brown sugar together.
  6. Fill each muffin cup halfway with batter, sprinkle a spoonful of the cinnamon-sugar mixture on top, then fill to the top with more batter and repeat the cinnamon-sugar layer.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
