Coconut Lime Fish Curry with Jasmine Rice

  • 1 can coconut milk
  • 2 limes, juiced
  • 1 tablespoon curry paste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup jasmine rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in curry paste and cook for another minute.
  4. Add coconut milk and lime juice, then bring to a simmer.
  5. Add fish fillets and cook until they are opaque and cooked through.
  6. In a separate pot, cook jasmine rice in vegetable broth according to package instructions.
  7. Serve the curry over the rice and garnish with fresh cilantro.

Notes

  • For extra heat, add red pepper flakes or chopped chili.
  • Feel free to substitute the fish with shrimp or tofu for a different protein option.
