  • 1 cup cucumber, julienned
  • 1 cup carrots, shredded
  • 1 cup bell peppers, sliced
  • 1/2 cup red cabbage, shredded
  • 1/2 cup cilantro, chopped
  • 1/4 cup peanuts, crushed

Instructions

  1. Cook the rice noodles according to the package instructions.
  2. In a large bowl, combine cucumbers, carrots, bell peppers, red cabbage, and cilantro.
  3. Drain the noodles and add them to the vegetables.
  4. In a separate bowl, mix the sesame peanut sauce ingredients and pour over the salad.
  5. Toss everything together until well combined.
  6. Top with crushed peanuts before serving.
