Cranberry Penne Salad with Orange Vinaigrette

A delicious salad combining the sweetness of cranberries with a zesty orange vinaigrette.

  • 1 cup fresh cranberries
  • 1/2 cup chopped walnuts
  • 2 cups arugula
  • 1/4 cup feta cheese
  • 1/3 cup orange juice
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine the arugula, cranberries, walnuts, and feta cheese.
  3. In a small bowl, whisk together the orange juice, olive oil, honey, Dijon mustard, salt, and pepper.
  4. Pour the vinaigrette over the salad and toss to combine.
  5. Add the cooled penne to the salad and gently mix.
  6. Serve immediately or refrigerate until ready to serve.

Notes

  • For a vegan option, substitute honey with maple syrup.
