  • 1 tablespoon coconut oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 can (400ml) coconut milk
  • 1 lime (juice and zest)
  • 2 cups jasmine rice
  • 4 cups water
  • Salt to taste
  • Cilantro for garnish

Instructions

  1. In a large pot, heat coconut oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add minced garlic and grated ginger, cooking for another minute.
  3. Stir in the curry powder and cook for 30 seconds to release its flavor.
  4. Pour in the coconut milk along with lime juice and zest. Stir to combine and bring to a simmer.
  5. Add the fish to the pot, cooking for about 10 minutes or until it is fully cooked through.
  6. Meanwhile, rinse the jasmine rice under cold water until the water runs clear.
  7. In a separate pot, combine the rice and water, bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.
  8. Serve the curry over a bed of fluffy jasmine rice and garnish with fresh cilantro.

  • Feel free to add vegetables like bell peppers or spinach for extra nutrition.
