Creamy Cowboy Soup Recipe

A rich and creamy soup packed with turkey bacon and fresh vegetables.

  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup corn, frozen or fresh
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the bacon drippings, sauté the onion and garlic until translucent.
  3. Add carrots and celery; cook for another 5 minutes.
  4. Stir in chicken broth, potatoes, and thyme. Bring to boil, then reduce to a simmer.
  5. Cook until potatoes are tender, about 15 minutes.
  6. Add corn, crumbled bacon, and heavy cream. Stir and heat through.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a spicier kick, add diced jalapeños.
  • This soup can also be served with crusty bread for dipping.
