Creamy Lasagna Soup

A comforting and delicious soup that combines the flavors of traditional lasagna in a creamy broth.

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach, wilted
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add onion and garlic, cooking until softened.
  3. Stir in crushed tomatoes, chicken broth, and add the Italian seasoning.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Simmer for 10-12 minutes or until noodles are tender.
  6. Stir in the heavy cream, salt, and pepper.
  7. Remove from heat, then fold in wilted spinach and cheese.
  8. Serve hot and enjoy!

Notes

  • For extra flavor, you can add red pepper flakes.
  • Top with fresh basil for a garnish.
