- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 16 ounces mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1/4 cup fresh basil, chopped
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add mushrooms, thyme, salt, and pepper. Cook until mushrooms are tender and any moisture has evaporated.
- In a bowl, mix ricotta cheese, half of the mozzarella, and basil; set aside.
- Spread a layer of marinara sauce in a baking dish. Place three noodles, half of the ricotta mixture, and half of the mushroom mixture. Repeat layers, finishing with noodles and remaining sauce on top.
- Sprinkle the remaining mozzarella and Parmesan over the top.
- Bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
- For extra creaminess, you can add a layer of béchamel sauce.
