Creamy Mushroom Lasagna

A rich and creamy mushroom lasagna that elevates a classic dish with indulgent flavors.

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  4. Add mushrooms, thyme, salt, and pepper. Cook until mushrooms are tender and any moisture has evaporated.
  5. In a bowl, mix ricotta cheese, half of the mozzarella, and basil; set aside.
  6. Spread a layer of marinara sauce in a baking dish. Place three noodles, half of the ricotta mixture, and half of the mushroom mixture. Repeat layers, finishing with noodles and remaining sauce on top.
  7. Sprinkle the remaining mozzarella and Parmesan over the top.
  8. Bake for 30-35 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

  • For extra creaminess, you can add a layer of béchamel sauce.
  • Pair with a side salad for a complete meal.
