- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 16 ounces mushrooms sliced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- Cook the lasagna noodles according to package directions.
- In a skillet, heat olive oil and sauté onions and garlic until translucent.
- Add mushrooms, oregano, salt, and pepper, cooking until mushrooms are soft.
- In a bowl, combine ricotta, Parmesan, and half the mozzarella.
- Spread a layer of marinara sauce in the bottom of a baking dish.
- Layer noodles, ricotta mixture, and mushroom mix. Repeat layers, finishing with marinara and remaining mozzarella on top.
- Bake at 375°F for 30-35 minutes until cheese is bubbly.
