Creamy Mushroom Spinach Pasta

  • 8 ounces fettuccine pasta
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. Add olive oil and garlic to the skillet, sauté until fragrant.
  4. Add mushrooms and cook until soft.
  5. Stir in the spinach and cook until wilted.
  6. Pour in the heavy cream, stirring to combine.
  7. Add the cooked pasta and chopped turkey bacon to the skillet, toss to coat.
  8. Sprinkle with Parmesan cheese, salt, and pepper before serving.

Notes

  • For a lighter version, you can replace heavy cream with half-and-half.
  • Add red pepper flakes for a spicy kick.
