- 1 pound butternut squash
- 8 ounces pasta of choice
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound sausage (Italian or your choice)
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese
- 1 teaspoon garlic powder
- Preheat the oven to 400°F (200°C).
- Cube the butternut squash and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
- Cook pasta according to package instructions. Drain and set aside.
- In a skillet, cook sausage over medium heat until browned and cooked through. Add spinach and stir until wilted.
- Combine roasted squash, sausage mixture, pasta, heavy cream, parmesan cheese, and garlic powder in a large bowl. Mix until well combined.
- Serve warm and enjoy!
