  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast the tomatoes for 20-25 minutes until they are soft and slightly caramelized.
