  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long grain rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil
  • 1 cup chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, garlic powder, onion powder, and paprika.
  3. Brown the chicken on both sides, about 5 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add rice and stir for a minute to lightly toast.
  5. Add cream of chicken soup, chicken broth, and stir to combine.
  6. Return the chicken to the skillet, ensuring it is covered with the mixture.
  7. Cover the skillet and transfer to the oven. Bake for 25-30 minutes or until chicken is cooked through and rice is tender.
  8. Garnish with parsley before serving.

  • For added flavor, marinate the chicken in spices a few hours before cooking.
