Creamy Tuscan Ravioli Soup

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried Italian herbs
  • 1 package (9 ounces) cheese ravioli
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and sauté for another minute.
  4. Pour in vegetable broth and add diced tomatoes and Italian herbs.
  5. Bring to a simmer and add the ravioli.
  6. Cook ravioli according to package instructions.
  7. Once ravioli is cooked, stir in spinach until wilted.
  8. Pour in heavy cream, and season with salt and pepper to taste.
