  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups broccoli florets
  • 1 cup peas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble, leaving some drippings in the pot.
  2. Add olive oil, diced onion, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
  5. Add heavy cream, broccoli, peas, salt, pepper, and thyme. Cook for another 5-7 minutes until the vegetables are tender.
  6. Stir in the crumbled turkey bacon and serve hot, garnished with fresh parsley.
