Creamy Winter Vegetable Casserole for Cozy Comfort Nights

A warm and hearty casserole perfect for cold winter nights, filled with seasonal vegetables and a creamy sauce.

  • 2 cups chopped broccoli
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1 cup cauliflower florets
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine all the vegetables.
  3. Add the cream of mushroom soup, milk, and spices. Stir well to combine.
  4. Transfer the mixture to a greased casserole dish and top with shredded cheese.
  5. Bake for 30-35 minutes, until bubbly and golden brown.

Notes

  • For added flavor, sprinkle breadcrumbs on top before baking.
  • This casserole can be prepared a day in advance and stored in the fridge.
