Crispy Smashed Potato Salad

A delicious twist on traditional potato salad, featuring crispy smashed potatoes and turkey bacon.

  • 2 pounds small potatoes
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup green onions, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes until tender, about 15-20 minutes. Drain and let cool slightly.
  2. While the potatoes are cooling, cook the turkey bacon until crispy. Remove from pan and chop.
  3. Smash the potatoes gently with a fork or potato masher.
  4. In a large bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, green onions, salt, and pepper.
  5. Add the smashed potatoes and chopped bacon to the dressing. Stir gently to combine.
  6. Chill for at least 30 minutes before serving.

Notes

  • Feel free to add other ingredients like hard-boiled eggs or celery for extra crunch.
  • For a healthier version, use Greek yogurt instead of mayonnaise.
