- 2 pounds small potatoes
- 4 slices turkey bacon
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup green onions, chopped
- Salt to taste
- Pepper to taste
- Boil the potatoes until tender, about 15-20 minutes. Drain and let cool slightly.
- While the potatoes are cooling, cook the turkey bacon until crispy. Remove from pan and chop.
