  • 2 pounds beef chuck
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 8 corn tortillas
  • 1 onion, diced
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef on all sides.
  2. Transfer the beef to the crockpot and add all remaining ingredients except tortillas, onion, cilantro, and lime.
  3. Cover and cook on low for 8 hours or until beef is fork-tender.
  4. Shred the beef and serve on corn tortillas topped with onion, cilantro, and a squeeze of lime.
