A comforting and easy to make crockpot potato broccoli cheddar soup that warms the soul.

Ingredients

  • 2 cups chopped broccoli
  • 1 cup cheddar cheese, shredded
  • 1 onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Combine potatoes, broccoli, onion, garlic, and vegetable broth in the crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  3. Stir in the heavy cream and cheddar cheese until melted and smooth.
  4. Season with salt and pepper to taste before serving.

  • For extra creaminess, blend some of the soup and mix it back in.
