Damn Good Vegan Lentil Soup

A hearty and flavorful vegan lentil soup that’s perfect for those chilly days.

Ingredients

  • 1 cup green lentils
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery, and sauté until softened.
  3. Stir in garlic and spices, cooking for 1 minute until fragrant.
  4. Add lentils, broth, and tomatoes, and bring to a boil.
  5. Reduce heat, cover, and simmer for 30-40 minutes until lentils are tender.
  6. Stir in spinach and cook for another 5 minutes.
  7. Season with salt and pepper before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Add more vegetables like zucchini or bell peppers for variation.
