Dark Chocolate Raspberry Cheesecake

An indulgent recipe that brings rich dark chocolate and tart raspberries together in a creamy cheesecake.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened cocoa powder
  • 1 cup sugar
  • ¾ cup unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup dark chocolate chips
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter.
  3. Press the mixture firmly into the bottom of a springform pan to form a crust.
  4. In a separate bowl, beat the cream cheese until smooth. Add vanilla and mix.
  5. Add eggs one at a time, mixing well after each addition.
  6. Melt dark chocolate chips and fold into the cream cheese mixture.
  7. Gently fold in fresh raspberries.
  8. Pour the filling over the prepared crust.
  9. Bake for 50-60 minutes or until set.
  10. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For added flavor, consider topping with additional fresh raspberries.
  • Use high-quality dark chocolate for best results.
