  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup dark chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine chocolate graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of a springform pan.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing on low speed until just blended. Do not overmix.
  5. Stir in sour cream and melted dark chocolate until smooth.
  6. Pour the cheesecake batter over the crust in the springform pan. Scatter fresh raspberries on top.
  7. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  8. Let cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight before serving.
