Easy Chicken Tortilla Soup

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 lime, juiced
  • salt to taste
  • 1 cup tortilla strips
  • 1/2 cup cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in cumin and chili powder, cook for another minute.
  3. Add chicken broth, shredded chicken, diced tomatoes, black beans, and corn. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes. Stir in lime juice and season with salt.
  5. Serve with tortilla strips and cilantro on top.
