- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 can (14.5 ounces) diced tomatoes, with juice
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn kernels
- 1 lime, juiced
- salt to taste
- 1 cup tortilla strips
- 1/2 cup cilantro, chopped
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Stir in cumin and chili powder, cook for another minute.
- Add chicken broth, shredded chicken, diced tomatoes, black beans, and corn. Bring to a boil.
