Easy One-Pan Taco Skillet

  • 1 packet taco seasoning
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 2 cups diced tomatoes
  • 1 cup rice, uncooked
  • 2 cups beef broth
  • 1 cup shredded cheese
  • 1 avocado, diced

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked.
  2. Add the taco seasoning and stir to combine.
  3. Stir in the corn, black beans, tomatoes, and rice.
  4. Pour in the beef broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
