Easy Pineapple Upside Down Cheesecake

A deliciously indulgent cheesecake topped with caramelized pineapple for a tropical twist.

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 3 tablespoons all-purpose flour
  • 4 large eggs
  • 1 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 can (15 ounces) pineapple slices, drained
  • ½ cup maraschino cherries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crushed graham crackers and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In another bowl, beat together the sugar and flour.
  5. Add the eggs one at a time, mixing well after each addition.
  6. In a separate bowl, beat the cream cheese until smooth, then add to the egg mixture along with the vanilla extract.
  7. Pour the cream cheese mixture over the crust.
  8. Arrange pineapple slices on top and place maraschino cherries in the center of each slice.
  9. Bake for 45-50 minutes or until set.
  10. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • For best results, use fresh pineapple instead of canned.
  • Serve with whipped cream for added flavor.
