1 can salmon, drained
1 cup breadcrumbs
1/4 cup onion, finely chopped
1/4 cup bell pepper, finely chopped
2 eggs
2 tablespoons mayonnaise
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil for frying
Instructions
In a large bowl, combine the drained salmon, breadcrumbs, chopped onion, bell pepper, eggs, mayonnaise, garlic powder, salt, and pepper. Mix until well combined.
Form the mixture into patties.
Heat olive oil in a skillet over medium heat.
Add the patties to the skillet and cook for about 4-5 minutes on each side until golden brown.
Remove from heat and serve warm.
Notes
For an extra kick, add some chopped jalapeños to the mixture.
Serve with a side of tartar sauce or a fresh salad.
