  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, sugars, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  5. Add the nuts if using, and pour the batter into a greased loaf pan.
  6. Top with streusel topping.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Let it cool before slicing.
