  • 4 large bell peppers
  • 1 pound ground turkey
  • 6 slices turkey bacon, chopped
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cups tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 375°F.
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet, cook the turkey bacon until crispy, then add ground turkey and cook thoroughly.
  4. Add onion, garlic powder, paprika, and Italian seasoning to the skillet and mix well.
  5. Stir in cooked rice and half the tomato sauce, then fill the bell peppers with the mixture.
  6. Top each pepper with remaining tomato sauce and cheese.
  7. Bake for 25-30 minutes or until peppers are tender.

Notes

  • For extra flavor, add some chopped veggies to the stuffing.
