6 whole wheat English muffins
12 slices turkey bacon
6 large eggs
6 slices cheddar cheese
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
In a bowl, whisk eggs and season with salt and pepper. Pour into the skillet and scramble until fully cooked.
Split the English muffins in half and lay them on a baking sheet.
Layer each muffin half with cooked turkey bacon, scrambled eggs, and a slice of cheese.
Bake in the preheated oven for 5-7 minutes until the cheese is melted.
Allow to cool slightly before wrapping each sandwich for freezing.
To reheat, microwave for 1-2 minutes or bake at 350°F (175°C) for 10 minutes.
