  • 6 whole wheat English muffins
  • 12 slices turkey bacon
  • 6 large eggs
  • 6 slices cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  3. In a bowl, whisk eggs and season with salt and pepper. Pour into the skillet and scramble until fully cooked.
  4. Split the English muffins in half and lay them on a baking sheet.
  5. Layer each muffin half with cooked turkey bacon, scrambled eggs, and a slice of cheese.
  6. Bake in the preheated oven for 5-7 minutes until the cheese is melted.
  7. Allow to cool slightly before wrapping each sandwich for freezing.
  8. To reheat, microwave for 1-2 minutes or bake at 350°F (175°C) for 10 minutes.
