A delightful spin on traditional French crêpes featuring turkey bacon.

  • 1 cup all-purpose flour
  • 2 cups milk
  • 3 large eggs
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 tablespoons melted butter
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup shredded cheese
  • 1/4 cup fresh chives, chopped

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, sugar, and salt until smooth.
  2. Add melted butter and mix well. Let the batter rest for 30 minutes.
  3. Heat a non-stick skillet over medium heat and pour in a ladle of batter, swirling to coat the pan.
  4. Cook until the edges lift and the bottom is golden, about 2 minutes. Flip and cook the other side for another minute.
  5. Repeat with the remaining batter, stacking the crêpes on a plate.
  6. For filling, sprinkle chopped turkey bacon, cheese, and chives on one half of each crêpe, then fold it over.
  7. Serve warm and enjoy!

Notes

  • For sweeter crêpes, omit bacon and add cinnamon or vanilla to the batter.
  • Chill crêpes in the fridge before serving to enhance flavor.
