Gingerbread Cake with Cinnamon Molasses Frosting

  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 3/4 cup molasses
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking soda, spices, and salt.
  3. In another bowl, beat together the butter and brown sugar until light and fluffy.
  4. Add molasses and eggs to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, frost with cinnamon molasses frosting.
