Gingerbread Yule Log

A delicious and festive Gingerbread Yule Log recipe that’s perfect for the holidays.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1/2 cup molasses
  • 1/4 cup vegetable oil
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking sheet.
  2. In a large bowl, mix together the dry ingredients.
  3. In another bowl, whisk eggs, then add molasses and oil.
  4. Combine wet and dry ingredients and spread the mixture evenly on the prepared baking sheet.
  5. Bake for 10-12 minutes or until set.
  6. Remove from the oven and let cool for a few minutes, then roll the cake in a clean kitchen towel.
  7. In a separate bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  8. Unroll the cooled cake and spread the whipped cream over the top, then roll it back up and place seam side down.
  9. Chill for at least 1 hour before serving.

Notes

  • For an extra touch, dust the log with powdered sugar before serving.
  • Adjust spices according to personal preference.
