- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3 large eggs
- 1/2 cup molasses
- 1/4 cup vegetable oil
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and grease a baking sheet.
- In a large bowl, mix together the dry ingredients.
- In another bowl, whisk eggs, then add molasses and oil.
- Combine wet and dry ingredients and spread the mixture evenly on the prepared baking sheet.
- Bake for 10-12 minutes or until set.
- Remove from the oven and let cool for a few minutes, then roll the cake in a clean kitchen towel.
- In a separate bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake and spread the whipped cream over the top, then roll it back up and place seam side down.
- Chill for at least 1 hour before serving.
