- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup refried beans
- 1/2 cup cooked rice
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro
- Heat a skillet over medium heat and place one tortilla in it.
- Sprinkle half of the cheddar and mozzarella cheeses on top of the tortilla.
- Add refried beans, rice, tomatoes, and cilantro evenly over the cheese.
- Top with the remaining cheese and the second tortilla.
- Cook until the first tortilla is golden brown, then carefully flip it to cook the other side.
