Grilled Nectarine Burrata Prosciutto Salad

Ingredients

  • 2 ripe nectarines
  • 4 ounces burrata cheese
  • 4 ounces prosciutto
  • 2 cups arugula
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the nectarines in half and remove the pit.
  3. Brush the cut sides of the nectarines with olive oil.
  4. Place nectarines cut side down on the grill for about 4 minutes or until grill marks appear.
  5. Remove from the grill and let cool slightly.
  6. In a large bowl, combine arugula, balsamic vinegar, salt, and pepper.
  7. Arrange the arugula on a platter, add grilled nectarines, torn prosciutto, and pieces of burrata cheese.
  8. Drizzle with additional balsamic vinegar before serving.
