  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 cup carrot slices
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken breasts and cook until browned, about 5-7 minutes per side.
  3. Remove chicken from skillet and set aside.
  4. Add garlic, broccoli, bell pepper, and carrots to the skillet, sautéing for about 5 minutes.
  5. Return the chicken to the skillet, sprinkle with Italian herbs, salt, and pepper, and cook until chicken is no longer pink in the center.
