Healthy Chicken Enchiladas

A delicious and nutritious recipe for chicken enchiladas that are easy to prepare and full of flavor.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 whole wheat tortillas
  • 1 cup shredded low-fat cheese
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine chicken, black beans, corn, cumin, chili powder, and half of the enchilada sauce.
  3. Fill each tortilla with the chicken mixture and roll them up.
  4. Place the rolled tortillas in a baking dish and top with the remaining enchilada sauce and cheese.
  5. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  6. Remove from the oven, garnish with cilantro and avocado slices before serving.

Notes

  • For extra flavor, add chopped onions or bell peppers to the filling.
  • You can substitute chicken with turkey or a meat alternative for a different twist.
